OK, not really, but I wanted your attention. When I was a working mom this was the most common dinner emergency. Second only to "I am to tired to stand in front of a stove long enough to get dinner on the table" . Let's start with the "I forgot", though. Face it, you can't remember everything, and sometimes we just forget. So what do you do?
At our house it meant we had a few options depending on the state of the freezer and, what was in the cupboard. Sometimes it meant omelets for dinner, a quick tuna casserole, soup and grilled cheese or maybe it meant a quick chicken or polish sausage casserole.
If you have some boneless skinelss chicken breast filets in the freezer, you know, the kind that come flash frozen in a bag?, then a chicken casserole with still frozen chicken is an option. Also smoked sausage, or keilbase cooks from frozen pretty easily as well.
Grab a box of Au gratin or scalloped potatoes from the cupboard. Yeah, I know, "dinner in a box",but hey, it may not taste as good as from scratch, but at least it isn't pizza, again. OK, take your box of potatoes, put it in a baking dish, cut your chicken up in to it, follow the directions add some frozen vegies, and there you go! Instant casserole! Follow the same directions for the smaked sausage/keilbase, only leave the keilbase intact on top. Poke a few holes in it with a fork so it doesn't split.

Welcome!
This is my very first post in my very first blog so please bear with me!
Having raised three beautiful girls on a single parents budget, I feel like I may have some homemaking and meal preparing tips that are of interest to someone. If you have some recipes or household tips you would like to share please let me know.
The idea here is to keep the recipes simple, healthy, fast and inexpensive.
So many of us parents do not have the time to prepare meals that are healthy for our families. We get in a rush and stop at the local fast food place on the way home because there just isn't time to make that great home cooked meal we planned on. And frankly who has time for OAMC? all that work? and you still have to heat it up, plus make sides to go with it, easier just to buy the frozen dinners in the first place and you get the same results, right?
Not exactly, and there is a happy medium. You don't have to live off of chicken nuggets, pot pies and frozen pizza, and you dont have to break the bank, or your back doing it. So lets start wtih our first recipe tomorrow.
